Fads come and go but Green Gourmet has remained true to ourselves - nourishing the body to develop compassion for all living things.
Our sprouted 5-grain rice offering contains a mixture of brown rice, buckwheat, Chinese pearl barley (Job's tears), red bean, green bean and eyebrow beans (black-eyed peas)
We have been serving our Sprouted 5-grain rice since 1999, knowing this would be the best for our bodies and that it would serve our customers well. We did it "because our grandmother did" and it was the traditional way of preparing brown rice and beans.
Now science has told us that pre-soaking the grains helps to break down some of the hard-to-digest proteins, making assimilation much easier. The soaking neutralises phytic acid which has been found to hinder the absorption of minerals such as calcium, magnesium, iron, zinc and copper.
And who doesn't need more calcium, magnesium and iron in their diet these days? With such busy, active lives, our bodies need all the help it can get. In nature, wetting the grain/seed for prolonged periods stimulates the production of beneficial enzymes which activate it give off a surge of 'power' for growth. This active, live seed is nutritionally superior to one that is still closed up. So that's why we should eat the activated/sprouted seed! (Not just because grandma told us so.)
Job's Tears (coix seed): This is a uniquely shaped, colourful, heirloom grain originating from Asia and Africa. Very high in protein, potassium, iron, calcium and fibre. This is offers a creamy, sweet flavour with a chewy texture that is great in salads, pilafs and rice dishes or as a side. This grain is not like the normal barely. This is both gluten free and kosher.
